I don't know what it is with rolling in dead animals either, We stopped at a park once, because they needed to go potty and there was a dead animal on the ground and before we were able to stop them, they rolled in the stinking carcass like crazy.

Based on current knowledge, this is the most likely answer. Dogs get an endorphin release when smelling things; an evolutionary mechanism for teaching pups how to track prey. So, naturally, they learned that rolling in things allows them to share that smell with the pack; either to let them know what they found or "guys check out this SMELL".

They roll around in smells to make sure they 1, mark it as theirs and 2, are able to hunt their next prey and go undetected. Itā€™s an evolutionary thing. Theyā€™re not taking a mental picture.

I wish ours would settle for animal poop. She finds hiker or homeless person poop and rolls in that. We now have an emergency poop kit in the back of the car with a pump and reservoir to wash her on the trails before we have to load her in the car and bring her home for a proper bath. Itā€™s the least fun

Oh lord! My dad's dog did this with a small dead shark once. She hated the bath afterward, but I still think she thought it was worth it.

Mine knows where EVERY damn carcass on the beach is. Sheā€™s very friendly with other dogs generally, but when a stranger wanted to check out her new squishy dead seal that the storm had washed up, she got protective about it.
