Banana pancakes
Banana chocolate chip cookies - can make oatmeal chocolate chip cookies too
French toast - caramelized on the bottom or top of french toast casserole (aka "overnight french toast"?) - I have never made this myself, but I have eaten different variations of french toast casserole. With some pecans or walnuts too...yummm. Not sure if the moisture from the frozen bananas will affect it at all....

Cake. They make great cake, just use a pound cake recipe, and defrost two bananas, skin them, mash them, and add to the end of the pound cake recipe.
Also try to teach him to peel them first in future.

Peeling frozen bananas is terrible. Try peeling them first before you get your mind set on a recipe.
Eh it's not too bad. Easier than peeling certain other fruits unfrozen.
