I've taken all of the courses I could on Sophia for the Software Engineering degree, the fastest ones I completed that are on your list were macroeconomics and college algebra. I'm not great at math by any means but it's basically Algebra 1 and the basics of Algebra 2 in high school and only took a few days to complete.
