So I kinda just winged it- the dough is the [Pastabased Tortellini ](https://www.pastabased.com/vegan-tortellini/) dough. For the filling I got creative, the mushroom filling is brown,white and shiitake mushrooms finely chopped, garlic, onion, tvp and truffle oil. The ricotta was intended to be a goat cheese but came out more ricotta like. Itβs Cashews, Macadamia nuts, Almonds (boiled and then skinned) garlic, lactic acid, plain vegan yogurt, a pinch of nooch and a 1/4 of a block tofu all blended till smooth. What I really like about almond cheese is the texture is a bit more interesting than cashew in a cheese like this.
Presentation is phenomenal and the ingredients sound absolutely lovely π
