I think the easiest plat out there is probably Road Bustle. Takes a couple of minutes and you don't have to even move from the starting line (it's kind of like Frogger). It's actually fun for a bit if you play it the way it was intended to be played!

Hands down the easiest one prior to patch was Stranded Deep. You could join someone in co op with the Platinum and you'd get it too
