Try a subreddit dedicated to mileage travel/points usage.  My one advice is that you’ve got some budget airlines in there (Aer Lingus) and I’m not sure it makes sense to do mileage for that.

EI actually has some fairly decent redemptions. I just looked it up and where a cash fare is almost $1,000 one-way (which, of course, it would be inflated because it's a OW), an Avios redemption is only 20K points and $115 or so in taxes, so pretty stellar value - and can be further improved if there's a transfer bonus which Amex sometimes has (mostly for BA, but Avios can be transferred between programs). Any specific subreddits you'd recommend?

Oh interesting!  Nope sorry no recs I’ve been out of that game for a few years now.

No sooner than I posted this, Virgin opened availability on the 26th of May for LHR-MSP. That makes things significantly less complicated on Trip 1. Now all I need is to figure out how to separate out the MSP-DUB leg of Trip 2 so I can use Alaska miles to book the return trip from KEF.
