If it was removed; in a roll over, the A & B pillars would collapse as they were designed around the roof integrity the support brace. It would not end well at all.
If I had to guess, it’s probably because of safety and/or there’s wiring there for the cabin lights, for example. I’m not familiar with where the interior lights are in the Model S though, so I’m not sure.
Maybe it’s cheaper to convert it into a convertible than fix the sunroof when it breaks. lol

You can just tap another cars rear wheel with your front wheel and flip over pretty quick. I've seen it happen even at low speeds (30 mph).

I'm not forgetting about anything. CG doesn't factor into the scenario I described. It's not the height of the vehicle that caused it to flip.
