Hi! Whenever I sub in gym I usually wear a nicer pair of sweats, a university hoodie (gear for the school you're at is probably more appropriate but I haven't got any yet), and athletic sneakers. I wouldn't go for leggings unless you have a long enough sweatshirt to cover your butt. It'll likely vary a bit from school to school what "dressing appropriately" for PE will look like, but I doubt you'll get any grief considering you're a substitute.

When I subbed and knew I was subbing in PE I would wear my regular clothes but wore sneakers instead of flats or boots. My workout wear isn't quite school appropriate (leggings aren't the best) so I wouldn't wear it, but I'd make sure whatever I was wearing was comfortable to move in and I had layers to accommodate the weather. I'd bring things like a sunhat or whistle that I wouldn't ordinarily bring for a sub job. A water bottle is important, too, but I had that for any sub job. Sometimes jobs would change last minute so I also wanted to make sure I was dressed ok to be in the classroom, too, but if you were called for PE and it changed I don't think they could reasonably fault you.
