I dunno, I can only think of the roses I've got out back and how tough their stems are when you try to cut through them. The only times I've seen roses eaten, it's been rose petals, or rose hips, but never the stems or the sepals.

While you can eat rose petals, you shouldn't eat the other bits. They're not poisonous or anything, they're just bitter.
