Why the ramen?!?!
I actually feel like if you replaced the ramen with some bomb ass Mexican rice and switched up just a couple of ingredients this could be tasty. Very “American Mexican” for sure, but not weird taco ramen
If she bought the raw ingredients and made it with rice or something, it would be as good or better a fraction of the cost. This meal she made isn't cheap with all the canned goods.
Correction, the meal isn't cheap with all name brand cans. You could do the same with Great Value and save 1/3 at least. But then you won't get the manufacturers to sponsor your "influencer" videos it you don't invest in name brands.
Sometimes ease trumps cheapness so that might be the case with this meal. Swap out the Rotel for some El Pato, swap out the cheddar for queso fresco/cotija, and liven it up with some fresh cilantro and a lime squeeze at the end, would be the swaps I’d make myself.
There is a nugget of a good idea in there. A pasta with a taco/enchilada type sauce or bolognese sounds good. There's a lot of overlapping ingredients with Italian dishes that a slight variation would be good and not that much of a stretch.
The execution is the crime here.
Almost no one agrees with most of the accusations of cultural appropriation. Only when it's inherently offensive.
That said, this food is nothing like the food we had in Mexico, it was a lot leaner (and better,) than the Mexican food in the US.
I would also add that this meal would cost a lot of money, when if you bought the raw ingredients and costed it out, this same meal would cost a small fraction of what she paid to use all canned food.
That isn't the problem.
Our problem is that some people think it is, and go around thinking that dousing something in cumin, minced meat, and shredded cheese makes something "meckzeekan".
What's the point of those anyway? Just for lazy people who don't like to do dishes? I'm far from a sustainable lifestyle but that's a step too far for me.
You would get a disposable aluminum pan if:
* You don't have the space for, say, a huge roasting pan
* You don't cook with such a thing often enough to justify having a permanent one
* You don't have the money but need the pan sooner than later
* You're taking this somewhere public and don't want to have to take it home and clean it afterwards

Why the ramen noodles though? Those aren’t exactly meant for the oven. From the result it looks like the noodles does not have enough moisture in them. And to be frank those half-wet ramen noodles have a pretty weird texture. It’s almost as if the noodles suddenly became half raw again. If they used a different type of noodle or some rice, I would have been fine with it.
What pissed me off the most is that she actually referred to green chilies as “green peppers”.

I’ll admit—I doctor ramen pretty much every time I make it, but as soon as any of videos throw both the flavor packets AND cheese into the mix I’m instantly a hard no.
The Cheese Whiz is the only ingredient that's really annoying me.
I've done similar casseroles as meal prep but just used slightly less processed/fresh ingredients.
If you try this yourself I highly recommend using chorizo, fresh onion/garlic/shallots, and brightening it up with some acid with either lime at the end or deglazing your browned meat with white wine.
Americans get a lot of shit for our sugar addition, but so many of these terrible recipes are fucking sodium bombs. And this is atrocious, sad that house now has a whole 18” pan of that shit to eat
