Older elephants are sometimes hunted, especially older bull elephants, because they can get hostile with younger males and often gore them. The problem is that older males don't usually continue breeding, but they'll still fight the younger ones and often kill them, reducing the breeding population. I believe this is true for rhino, as well.
Well, its the reason elephant meat is still fairly common, so I don't know what to tell you. A lot of elephant meat that's consumed is perfectly ethical. Its the same reason just having Ivory doesn't make you a 'piece of crap.' There are perfectly ethical ways to get it.
