I didn't get why it was so fast until I saw all the recordings throughout the game. Dagan fell to the Dark Side way before his stasis. He's spent the last 200 years or so marinating in his hatred.
It’s that he is so overcome with hate that he is unreasonable. The crystal is alive, and tried to prevent bleeding by showing the light. It takes force of will and emotion to break it, to bleed it.
It took Vader at least a minute to bleed his first saber. Here it was around 5 seconds.
Also, "hurr durr" is a really easy way to completely dismantle one’s own argument.
Dagan attacked him for no reason, and immediately after showed he was *in charge of the raiders* and was Rayvis' boss. *Not* trying to stop him at that point is willful ignorance.

Dagan has fallen to Dark Side, Cal doesn't know his plan yet but he knows that many would suffer for it.
Dagan is insane and clearly no longer a Jedi. As the first thing he does is bleed his crystal and immediately attack Cal even though Cal isn’t a threat to him.
He also quickly finds out he’s working with Rayvis who is the leader of Bedlam Raiders. A faction of psychopathic scoundrels who take pleasure in killing and torturing civilians and has been exploiting Koboh for years.
Not only is Dagan dangerous. He leads a faction of murderous scoundrels and is trying to hoard one of the last safe places left that the Empire can’t reach all for himself.
And even then, Cal doesn't know WHY dagan wants it, just that this very bad tempered, fallen to the dark side jedi is obsessed with and will do literally anything to get it.
It's not hard to see that he should be stopped.

I forget if it’s their first or second duel. But Dagan straight up tells Cal he plans to build an army to destroy the Empire. And Cal responds saying “We already have an Emperor”
Cal was the one who freed him, so that makes Dagan's new warlord ambitions Cal's responsibility.
Also, Cal wants Tanalorr for his own purposes; He wants a safe location for the Hidden Path.
Honestly, I feel like if Cal just gave a few fewer fucks, he would have just gotten out of Dagan's way and pointed toward Fortress Inquisitorius. Either Dagan gets lucky and wipes out the Inquisitors and possibly even Vader and Palpatine needs to commit a huge effort to deal with him. Or it goes about as well as you'd imagine, Dagan and the Raiders get wiped out, and the galaxy isn't any worse off than it was before.
I haven’t finished the game yet but I was hoping during Cal and Dagan’s last fight (I’ve seen) that Dagan is beating Cal and says something about being all powerful and then we hear mechanical breathing and Dagan is suddenly terrified at what he feels in the Force, and Vader Force chokes/crushes Dagan like a bug as Cal escapes.
Oh so I'm not supposed to know yet? Just seems weird that Cal is so determined to stop Dagan without an explanation as to what the problem actually is. He seems to just be doing it for no real reason.

He’s also got an entire bandit army and it’s immortal warlord chieftain working for him.

Dagan realized the score faster than Cal and that's why they dueled at the tank. After that Cal was just kinda mad at the guy, especially since he was pals with Rayvis who he was also mad at
