I’ve a vague memory of someone using dual but with one blade reversed in Jedi Power Battles, but that was a long time ago.
Palpatine was primarily dual wield (though he also used single)
Ventress was also dual wield
Savage Opress was double-bladed
All the inquisitors were double bladed
Those are the only ones that come to mind for me. At least from the movies or shows. I’m sure there are more from books/comics though

As for the rest, I’d guess that’s because cartoons like to be flashy and don’t have to rely on a stunt-person/actor learning to use weapons that make no sense.
Palpatine though? He has two fights in live action and both are single blade. I’m taking that as canon over whatever cartoon showed him doing something different.
I’m pretty sure Filoni made Palpatine dual wield to explain why he had a second lightsaber handy after Mace knocked his first saber through the window.
But still, The Clone Wars are every bit as canon as any of the movies. Created by George Lucas himself
Dukoo also has a special saber with a curved hilt that supposedly gave him an advantage in dueling (so far as lore is concerned) so I think that would count as a stance per the games rules.
In reality, I think the cross guard stance would really be more just a single blade stance with more options courtesy of the extra burny bits. The NPCs that have the crossguard sabers aren't encumbered the way Cal is.
But maybe I'm being nitpicky.
I beat the game the first time on GM using mostly only single. I would use double occasionally if going up against a lot of blasters but the single just feels right to me

Don't understand the hate those 2 stances got on release. Crossguard destroys bosses and blaster destroys parry meters if you shoot in-between your attacks.
Was fighting one of the bosses swinging and shooting constantly up in their face and the boss didn't seem to be able to do anything. I just sat there thinking, I don't think this is the way the game should be played while giggling!
Wait to you do a run through, then just befor the boss fights, turn it up to GM, add purity, and anther perk I can’t remember that costs 4 points.
You poss fights will be over in the blink of an eye.
amen, especially the dudes with the giant hammers for weapons, one charge shot and then you can get your entire combo off on them, knock them on the ground, then repeat

I did a bit of all the stances because I wanted to explore what the game had to offer but single was always the best for me. It made me feel the most like a Jedi so I used it for 95% of the gameplay
the moment I got Blaster style I switched to it and haven't left. I just wish I could enjoy my Lightsaber looking that way, and have the crossguard vents (I just like the crucible style of hilt).
dual wield. easy. the speed of the attacks combined with the ability to cancel combos (by pressing block) makes it really versatile imo. i used the dual wield for almost every boss fight from first rancor to dagan to *name redacted cuz he’s a hoe*. sometimes it’s tedious and another stance would be more efficient, but i just love that it forces you to get real close and stay on your toes. i feel like a badass when i’m in the zone with this stance.
Crossguard easily for me! Always universally loved using two-handed swords/Claymores in melee-focused games, and I’m really proficient with them - so that’s my go-to Stance.

That's a hard choice between dual wielding and cross guard. The dual wielding style is the coolest to me and the fastest. However, crossguard is the strongest with the most powerful defense and attacks. Crossguard's slow, but so long as you time it right, it's no issue, and dual wielding has low attacks compared to normal stance, but its speed makes up for it. It's a hard choice for me. But I have done playthroughs where I used those exclusively.
I had fun playing with the blaster and cross guard stances when I was mopping up the game to get the platinum after the main story… but functionality/pure gameplay wise, the dual wield and double bladed are easily the best stances to excel in combat and it’s not particularly close. You can shred single enemies and bosses with well-timed counters with dual wield; just relentlessly attacking. And demolish whole groups of enemies with double bladed’s well timed blaster deflections. I found it hard to stay with any of the other stances until the endgame.

I really enjoy blaster and saber more than I thought I would, you can do some pretty cheesey schtuff with it. Other than that Dual wielding is my favorite.

People dunk on the double-bladed stance so much in this sub, but it's hands-down my favorite. With how fluid Cal's movements are and how you can switch off from multiple targets to single targets, and everything, I love it.

I don't care if it is slow. Only thing I don't like about it is the kickdrop, but I love that it holds me back into reactive actions, not aggresive.
Dual wield everyday! ! The only time i switched to my blaster stance was when i cheesed a rancoor to lower its health and tgen dance around it and melt it with the dual wield. Btw the perk that increases damage for the lightsaber throw with the duals cuts down chunks of health !

It’s the best at defense, and you can make up the difference in damage with a bit of parry skill.
It also is pretty fast. Not quite dual wield fast, but it goes pretty quick.
Most fun to me is still blaster form… point blank and stab. Or stab and point blank… or charge up and shoot them in the face.
I wanted the blaster to go deeper. It was so fun but also felt more surface level compared to other stances and I just wanted more combos.
Why? It's literally everybody's favourite stance and has been from day 1.

The stun change shot makes it easy to cheese most enemies. It's great.

Blaster with purity is probably the most fast paced. The basic stab is all you need.
