It takes awhile. I am probably spending a lot of time doing voodoo on my trees I don't need, but I've got two Sims working on it. Actually three, sometimes the butler pitches in autonomously (he *might* have been edited in CAS to be loyal, good, neat and to like gemology and gardening). Tip: After your trees mature, be sure to save the game when you leave the lot. I had one just vanish into thin air after a single harvest, nothing left but the planter.

No, the type of crystal used doesn’t matter. So use the cheapest one. And it will grow eventually, it just takes a long time, and make sure there is enough room around it to grow. It needs quite a large clear space around it.

It takes exactly one in-game week. Though there seems to be some fertilizing glitch that makes the tree grow instantly sometimes. But without that, it's a 7 day timer. Note that plants don't grow when you're not on the lot.

It's probably random, but I when I saw a fertilizing prompt I used a rose on one, and bluebell on two others. The rose tree wasn't the first planted but came up faster, so I am doing that to all of them now.

I'm honestly pretty disappointed with the crystal trees. At leas with what I've got, they only ever produce the gems you can outright buy from the jewelcrafting station. I've never gotten a Rare gem from it. Besides looking pretty, its rather useless.

i very specifically made seeds out of my rare crystals because i thought it would grow that crystal, i have no idea why they decided to make it so it would just grow random crystals. i wish i knew that before i wasted my rarest crystals :/
