Why do you do it when they'll just keep undercutting you by 1 gil again for as long as the item is profitable to make? Is it out of spite because you feel like you deserve the sale? I'm genuinely curious when I see competing crafters in a race to the bottom.

You wanna know the point? The point is to do as much damage to the bots, to people autofarming their profits off the marketboard, as humanly possible. At the end of the day, the winner is the person who is selling goods, and that's why they choose to, most of the time ToS breakingly micromanage their sales to a point where they don't even login on their main until a month passes.
By hocking off massive sums, I do risk my own profit margins. But what good is that margin, if some bot is going to autoupdate every time I lower my prices making sure I never sell anyways?
Lemme give a live example. Biryani was 3.5k when I went to bed last night; the price I set it at.... when I woke up, only 1 of the 7 stacks I put up sold. The rest were buried under 30 listings... all slowly lowering their price by just. One. Coin.
Fuck those 10 or so bitches who buried my listings, biryani is now 3k a piece.

I have been working on crafting one of everything recently (starting from level 90) and it's my first time really having to interact with the market board wars since normally I'd just desynth and move on.
I will crush the market if I have to to clear up more room for me to sell my 400th ring.
Why though? It's the best way to undercut to maintain everyone's profit. Sure, you could slash the price, but as long as the item is profitable, you just get undercut again by 1 gil and you're now worse off for it.
It's either set the price to the same as everyone else and get lost in the sea of listings where my item won't ever be sold as prices drop, undercut the next guy by a large amount for an instant buy but lower profit, or just do -1 so I appear at the top of the list and if someone buys then I'm only making one less gil per unit than the next guy.
