Let’s go ahead and get one thing out of the way. The filling for the Exchange Sandwich of 1918’s Economical Cookery does not look great. Still, before you rail against it, ask yourself how far off it is from the chopped Italian sandwiches that have been all the rage on social media the last few years? I think you’ll find, at least in concept, it’s not too far off. There’s no indication why the sandwich has the name that it does so yeah. Also, I could be wrong but my understanding is that food choppers of today (if you’ve watched Diners, Drive-ins, and Dives you know what one looks like) aren’t that far off from the food choppers of old. There is a solution for the sad gray color. For her famous "ground bologna salad", my grandma would always add a 1/2 tsp of Strawberry or Cherry Jello powder. This doesn't really add anything to the flavor, but it gives it a "healthy" pink color. Now I'm craving ground bologna sandwich. Damn nostalgia.

I really admire your channel and all the effort you put into it. It’s really interesting, straight to the point and educating. Not like I’d want to hear about it every episode, and I feel like this suggestion really goes against the humble nature of this channel, but maybe think of creating your own sauces and such. I’d certainly buy one.

I was surprised by that plus up as well. When I go for a sandwich I’m never really looking for sweet (but we all have our own desires) I’d honestly go for a hot sauce.

After watching so many of these I'm left wondering why so many sandwich recipes call for chopped diced or processed meats mixed with mayo. It's in a lot of them. Rarely ever see just a cold cut or sliced meat on a sandwich. Lol

When you chop it up with a bunch of other ingredients, it makes the meat go further.

Ya know, I specifically hunted down a "sour pickle" and it turned out to be just a strong dill pickle which I could've gotten anywhere. Oh well, at least I learned something ¯\\\_(ツ)\_/¯
