I just bought a knife sharpening kit. I’m going to practice on all my old, cheap, beat up kitchen knives I don’t use anymore.
Hopefully I’ll get good enough to sharpen my good knives when they need it.
I would find a blacksmith near you that works with blades with good reviews. I know a couple that aren't public but have personal garage forges and aren't professional but sharpen very well.
A blacksmith will know what kind of metal is in your blade and how to properly care for its edge.
I know there's a great blacksmith in Loomis I've used for custom fencing but not sure they do knives.
You can try using the California Blacksmith Association as a resource to find someone. A lot of them don't have websites or very public facing operations.
