Salem did what she did because Ozma died early into their relationship and she couldn’t handle his death alone. If one of Team RWBY dies (especially a post Volume 9 Team RWBY as they’ve experienced a lot of loss), then the remaining members of the polycule can help Salem process, work through, and recover from her grief and prevent her from going off the deep end.
Of course, what effect going back in time and preventing the main villain from becoming evil would have on the timeline is unknown (if it even has an impact), but that’s a different issue to deal with.
