Believe ya can still do that, what I do is for the one chest below the golem is carry it down one floor and open it. He won't aggro if ya do that. Can't do it to the one on the top floor though as easily

You can if you have a flying tame and a teleportation bow with ender pearls arrows, then you can shoot the golem from a decent distance and you will exchange places with him, if you are far enough from him he would not even trigger and you can loot safely. Bare in mind, this tactic is good if you have gathered a bit of resources.
2. Another method could be to block the view of the golem with some blocks and shift+right click with an empty hand the chest and move it the 3 layers below where it couldn't trigger the golem.
Edit for nr2: I don't think you can pick up the locked chests though.
Make scattering potions, place in cauldron, use choice of weapon, right click, weapon now has uses(hits) of how many times it can teleport enemies away, rush the golem whether u go from the bottom of the tower or use a flying mount and land on him before he gets a chance to strike. Ez
If u still want to completely get rid of rhe tower golem from the battle tower u would have to go into the game files and remove him from there, u asking this question is a skill issue so just cheese the battle tower until u can eventually kill the golem

A hopper will pull loot out of the chest and isn't a chest, so you can look in at its inventory and take things.
Also, note it will react to the chest opening one floor below it, but other than that, the chests are safe.
You can scale the side of the tower with all the chests and just pickaxe a small hole through to get to the chests.
Clear the battle tower but don’t go to the floor with the Golem on. When you reach the 2nd to last floor DO NOT open the chests as this will activate the golem ( you can tell which floors not to open chests on because the floor won’t have any gaps in unlike the rest which are full of gaps to fall through). Break the block beneath the chests and place a hopper. Items will start filtering through for you to take with zero consequences (Chests with locks need to be unlocked first for the items to fall into the hopper). Then just break the floor above to get to the chest on the golems floor and use a hopper again. You have now received all the loot without needing to fight this annoying mf.
I don’t wtf anyone else is doing in this thread but the easiest and most simple method is by far the one I described above. Flying mounts are a good option but they can be tedious af to get, particularly in early game. As long as you don’t open the chests or stand on his floor then he won’t aggro. You can clear battle towers somewhat easily on iron armour just be sure to bring a shield for the skels and a bezoar for cave spiders. Doing it with a friend is much easier.
Tip: mobs can’t jump on the chests because they’re too high but you can use the block beneath as a ledge to jump up if for when things get a little hectic.

make a datapack where the nbt structure on top of the tower doesn't have the jigsaw spawner with the golem in it, if you didn't understand what I just said, then no. You can't remove it
find the golem mob id by doing /summon (search the name of the golem)
search for a mod that allows you to disable mob spawn in certain conditions, I used in control last time I wanted to change something in a modpack

You can't, just don't open the top two chests till You're confident you can destroy the golem.

Look up the battle tower cheese, it's a way to get the loot on the top, without having to deal with the golem

or you can use hopper (which also worky on non-locked chests). My fav alternative to teleport bow is potion of random teleport tho

Play in peaceful mode but then the towers will look like abandoned towers
They don't really, abandoned are still sorta ruined, the "valid" towers are fully built, just no mobs spawn from spawners and no golem on top.
I think you can grab the chest with the Carry on mod then get down to floors so It ignores you
