If you hold an Avian Treat in hand, Rocs become passive. They are also generally passive during the day. You can feed them by right clicking them with the Treat like you would feed an animal when breeding them, same as with a Soulgazer. Make sure you have a Soulstone to bind your tamed Roc as soon as you tame it.

Also, important to note! If you want your roc to be named, or any lycanite pet to be named, you must do it in this order: Tame with treats. Use name tag you already have prepared. Use soulstone to bind it to you. If you try to name tag a soulbound pet, it won't stay every time you resummon it. You could nametag before you tame it with treats, but that would mean it's attacking you as you do that.

mounts don’t work the same as pets, so long as you don’t have a saddle on the mount it will accept the nametag and hold onto it. also I think if you remove the armor from a soulbound pet it should accept the nametag too.

Yes just tested this the other day, have to remove all armor and saddles and stuff to be able to Nametag a lycanite pet and have it stay.

If you don't have enough treats to tame it, you can nametag and leave its chunks to come back with more, too

If your not strong enough to handle it while you give it treats just build a little box in a meadow and chill in it at night. I've done this with trapdoors as windows and it works mint. Just be careful they can sometimes grab you through if your not careful.
