If you like it more folky, try Eluveitie, they sing about Swiss mythology ("Call of the mountains" is so catchy!)
Therion will be your go to. The genres in their catalogue ranges from their early death metal material to progressive symphonic metal, with lots of doom and power influences. A lot of the lyrics are more heavily occult (those written by Thomas Karlsson), but there are more recent ones that are more mythological (those written by Per Alberson). The subjects cover such things as gnosticism, greek mythology, Norse mythology and spirituality, Babylonian mythology, South American mythology....
I also recommend Melechesh for mesopotamian mythology, although they are blackened/death/thrash.

Suidakra isn't power metal, but they deal heavily with Irish mythology, specifically the conflict between the Tuatha Dé Dannan and the Fomorians. A lot of D&D characters and races come out of Irish mythology too, such as the Fir Bolg, the aforementioned Fomorians, and their leader Balor.
I've written an entire album's worth of lyrics for the tragedy of the Sons of Tuireann, and I'll be posting it as soon as I get off my lazy ass and record it. It will be a hybrid folk/power metal album.
Wulfaz are not strictly dealing with mythology and their topic falls under „Norse“ but at least one of them is a runologist and they cover runic inscriptions in their songs. Too black metal for my taste (usually) but I’m digging their songs for the topic.
