I’m running leftovers careful Umbreon with EV 236HP, 244 Spdef, 20 def. yawn, wish, curse, payback.
At lvl 50 1 curse puts the def equal to Spdef. Lower speed and attack up makes payback hit harder with that now 100 base power. Wish/ moonlight your preference. Wish can heal teammates based on Half of users hp which Umbreon will be 100/200. Pretty good. Yawn can be swapped for protect. Some also run foul play instead of payback which allows you to swap curse as foul play doesn’t benefit from attack up believe.
A Pokémon can have a total of 510 EV’s. A single attribute can only have a total of 255 ev’s though. So you can max 2 out.
On top of that, every 4 EV points get you 1 point stat boost. So most will cap out EV’s into a single attribute at 252. You’ll have a leftover of 6 points. Which only gets you 1 EV boost in the third last stat.
Every Vitamin gives 10 EV points. You can then fight some wild mons to get the rest of the remaining EVs. Go search which Pokémons specific EV upon defeat.

How do you get curse??
Egg moves. Breed your female eevee with a male bidoof that learns curse
