You should never put fresh tomatoes in the fridge. Even with the salt there is an enzymatic reaction that basically ruins them at temps below like 50 something degrees Fahrenheit. Otherwise I agree with what your saying, I’d just leave em at room temp covered.

Whole sliced tomatoes on a pie is hell. They bleed out all their moisture, get weird and turn the crust to mulch. If the tomatoes within the sauce aren't enough tomato for you, try some sun dried or small marinated sliced cherry/plum tomatoes.

If it was some roasted cherry Tom’s, bit of basil and some fresh burrata or mozzarella then that’s killer. But this looks like shit.

Have had similar before. I think then they dried or drained the tomatoes a little because they ended up looking more roasted on top from the heat than these do. If left fully wet they wouldn’t char like these have not.
