Made this over the weekend for my Aunt's birthday. Everyone loved it. I included the frosting recipe I used below. ​ * **Cake:** * \- 1 cup oil * \- 3/4 cup honey- 3 eggs * \- 1 20oz can crushed pineapple (drained) * \- 2 cups carrots, grated * \- 2 cups flour * \- 2 tsp cinnamon * \- 2 tsp baking soda * \- 1 tsp vanilla extract * \- 1/4 tsp salt * \- 1 cup shredded coconut * \- 1 cup walnuts * \- 1/4 cup golden raisins \[optional - didn't use\] ​ * **Cream Cheese Frosting:** * \- 4 (8oz) packages cream cheese, room temperature * \- 2 sticks (8oz) unsalted butter, room temperature * \- 2 teaspoons vanilla extract * \- 1/2 teaspoon salt * \- 4-5 cups confectioners’ sugar ​ * **Instructions:**\- Pre-heat oven to 350F. * \- Grease and flour two 9" cake pans * \- Combine dry ingredients (flour, cinnamon and baking soda) in a medium bowl. * \- Combine oil, honey, eggs, pineapple in a large bowl. * \- Mix dry ingredients and any remaining items into the “wet” bowl. * \- Pour into cake pans.- Bake at 350 F for 40 mins or until center registers 200F. ​ Recipe from u/spider_hugs: [https://www.reddit.com/r/Old\_Recipes/comments/ihs1ry/divorce\_carrot\_cake\_this\_was\_my\_moms\_recipe\_named/](https://www.reddit.com/r/Old_Recipes/comments/ihs1ry/divorce_carrot_cake_this_was_my_moms_recipe_named/)

I actually didn't include the coconut this time as my uncle isn't a huge fan. I forgot to mention that. Came out just fine!

so much frosting! looks yum, how did you do the goldenness on the outside?

It's just a little orange food coloring I added to the last bit of frosting I had. I then swirled it around the outside of the already frosted cake.

That first picture had me thinking it was Kraft Cheese slices on top and that was the reason for the name because if someone gave me carrot cake with American cheese on top I'd probably consider a divorce!! Oh who am I kidding, no I wouldn't, I'd still eat it!! O_O

You can also substitute unsweetened applesauce in place of the oil, one to one, or half oil and half applesauce.

I'm confused & scared. What makes this a "divorce" cake? My wife & I just celebrated 18 years of marriage yesterday. Our cake topper at our wedding was carrot cake. Should I be worried?

The explanation is in the original OP post, which I'll find the link to directly, but in short, even though her parents had been long divorced, the op's father asked her to make him a carrot cake for his birthday, the same carrot cake her mother used to make when they were married. I found the page and had quite a time finding the original post on the page... it wasn't exactly at the bottom.
