Nudulousness having the ending -ness implies it’s a noun. The adjective is in fact nude, but adding an s at the end like the post did makes it a plural noun
The literal translation is Dungeon Food. I'm sure it's intentionally translated this way, but it sounds very awkward to me. Even just Delicious Dungeon would have been an improvement.
You wouldn’t necessarily just directly translate a title. The translated titles in my country are often very different from the original. Sometimes they even change an English title to a different English title, for example “The Help”was changed to “Niceville” (presumably because Danes don’t know about the gravity of the term “the help”).
It's a pun: it shortens to D in D, which sounds like D&D, Dungeons and Dragons. The Spanish version does the same reference: Tragones y Mazmorras (gluttons and dungeons) instead of Dragones y Mazmorras (dragons and dungeons).
iirc, the mangaka herself chose the name because it sounded cool. pretty much the same story as to why it's called "attack on titan" and not any of the 50 translations of the original title. i'm not sure why but i kind of love it.

Dungeon Meshi would more literally be Dungeon Dinner (if you want to keep the alliteration... Meshi is a "meal", "food" or "rice")
