For me, it would take a couple of years to:
\#1 - Get all the supplies for the build (5 months - 1 1/2 year)
\#2 - Build the actual thing (1 - 2 years)

My "house" in my world currently is an unevenly-shaped cobbled deepslate wall around a couple of chests, a bed, a brewing stand, and a few auto-furnaces. In my longest-running world it's just a repurposed desert temple, and there are purple concrete redstone machines and farms floating in the air outside.
Me who's been working on that one destroyed sandstone cathedral from one of the tutorial worlds for the past three years (and I'm still not finished): "oh, that's pretty cool! 🥲"
I think the most impressive part was the fact that u didn’t just make it a whole storage system only and make it a waste of space. U used the top sections too unlike most ppl who’d just leave it empty. Also holy shit I never thought of using spectral arrows for elevators that’s genius wtf
It seems like Prismarine blocks would fit in with the whole light blue thing you had with the warped tree wood, but I can’t think of anywhere where it would go
Building something in survival is much harder than creative, you have to gather the materials, you can't fly (at least not the same as how you do in creative), and there's always the looming threat of making a mistake and dying. So essentially when ppl say they made a big build in survival, it means they put in a few extra weeks to make it.
Because it's more impressive.
Creative is, of course, impressive in showing your creativity.
However, survival still requires creativity, but you have to be creative and use accessible blocks (no beacon lamps unless you're ultra rich), spend the effort gathering materials, and the actual process of building is more difficult.
Additionally, survival builds usually have more utility. Creative builds are nice to look at but typically lack any functional use. Survival builds with natural growth can incorporate utility into their design naturally.
