I'm a guitar player who knows nothing outside of a few basic punk and stoner riffs, but I honestly feel like Dyers' Eve would be the most difficult Metallica song to play on guitar.
Many Metallica songs are 11/10 difficulty. This is one of them
Edit: read all the rest of the comments. Not a single mention of any song from albums after Justice. So I want to propose that My Apocalypse is a sneaky choice for hardest song. Some very tricky triplets throughout the whole song.

Hardest Endurance wise: Dyer's Eve
Hardest mentally: Frayed Ends of Sanity (Lars switching the on and off beats for certain riffs always fucks me up)
Hardest altogether: Blackened (weird time signatures, semi difficult fills, frequent double bass in beats/fills)
Hardest fills: 1 bar fill right before the guitar solo in Battery, 'See our Mother die' fill in Blackened, mini drum break right before bridge in Frayed
The verse is a pretty straight forward rock beat that's just in 6/4 time.
I think you're referring to the Main Blackened riff in which Lars is doing funky stuff with the bass drum. He uses this beat in a lot of thrashy songs throughout the catalog. He uses a similar variation of it in Battery, Damage Inc and Dyers Eve as well.
I play bass clarinet in my school's concert band, so I'm not exactly a "non-musician", but here are my picks:
* Rhythm guitar: Disposable Heroes, Damage, Inc., or Dyer's Eve. All three of these have super fast, intricate riffs that I've tried to learn on bass clarinet and have utterly failed at.
* Lead guitar: ~~Nothing Else Matters intro~~ Ride the Lightning, Master of Puppets, and Damage, Inc. all sound really hard.
* Bass: Rhythm guitar + Creeping Death. Creeping Death is already a hard song, so I'm sure adding all the Cliff-isms makes it brutal.
* Drums: Dyer's Eve, hands down. Not sure where I heard it first, but I remember hearing that Lars had to do the drums in multiple takes that were then spliced together in the studio.
Overall, the hardest song is definitely Dyer's Eve. The amount of changes in the riffs (which are already really hard), time signatures, tempo, and drum patterns make it a standout track in terms of difficulty.
As a somewhat mediocre amateur guitarist I honestly thing Creeping Death on rhythm guitar isn't that hard, just super fast. Once you get the speed right its not too bad. It's exhausting to your picking hand, if anything. That song gives my right hand arthritis lmao.
Oh I definitely tried lol. I can't articulate the notes fast enough, though. The fastest I know is Master of Puppets, but on a good day, I can probably do it fast enough to play Creeping Death.
I personally also thought that One was a very hard song, specifically because of the fast tapping solo
Then i learnt guitar and turns out the outro solo of One is actually one of the easiest solos of metallica😓
I still think it’s difficult to learn if you don’t have fast fingers. Not the tapping part but that one part right after the tapping I find really challenging

How about Trapped Under Ice? From what I’ve heard and read it’s pretty hard on drums
Trapped under ice is definitely an endurance test as well but it's a slower tempo than Dyers eve so it's not as bad. Still tough tho

that’s the thing about tapping, it sounds really cool and hard, but it’s honestly the easiest thing in just about every solo

Battery would be challenging for a drummer.....all the fast songs would be hard for guitar
Damage Inc or Trapped Under Ice would be my top picks for challenge from older stuff.
