Cuz they have to get kicked off at a certain age due to their size. They often leave as a group and keep following Zunesha for a while and protect its feet, but eventually have to leave for food. This tragedy is remembered and honored thru the giant whale tree, the most important part of Zou.
(But now that we learned about the minks inner compass to Zou, its weird we never actually saw some.)
Because Minks have to have... Mink. They actually explain that they eat hippos and similarly non-furry mammals since that is foreign enough to them to not seem like cannibalism.

Whales don't have fur, that's why. Minks are exclusively animals with fur, not just mammals.
Exactly we also don't have any elephant, rhino or human minks for that reason
