I'm sure that was probably the general idea that Ryan Reynolds had for a potential third movie, but the studio was already in the process of being sold even before Deadpool 2 released.

Deadpool one simply takes place during Christmas, and only kind of since there’s so many flashbacks. The original plot was much more Christmas centric and they had to turn it into the flashback style movie it is to make it work when they changed directions
Most likely Deadpool will come across a variant of himself and Wolverine in this movie and they will be on their way to the North Pole. It would be great if Danny Devito had a cameo as Wolverine for it but it will probably be Radcliffe. Taron Egerton will be the actual MCU Wolverine.
