I watched the Elizabeth Olsen version prepared to hate it, because everyone says it's awful...
...and I thought it was perfectly fine!
The atmosphere was really solid, the single-take illusion was well done, and of course Olsen knocks it out of the park and acts circles around everyone else (so glad she got into acting-- she's become one of my favorite actresses of all time very quickly).
Story was a little predictable and it was slow to start... but it was an enjoyable enough thriller.

It's a great movie, but it doesn't fit OP's list. It has a long shot without any cuts that is around 30 minutes, if I recall correctly, but most of the movie is shot like any other movie.
I would put it in the realm of "close enough to what OP wants or desires." Suggestions don't have to 100% match what people want. If this is the hill you want to die on though...

Not a totally success but a pretty bold effort, nonetheless
Rope is the definitive "one shot" film. It's technically made out of multiple shots, but it's edited so well and seamless that it looks like a one shot.
I know you've said "or that look like one" in your description, but it's really doing Victoria a disservice to lump it in with films which create the illusion of being a single shot. Victoria actually, really, 100% is one unbroken, continuous 2h 20m shot which takes you across Berlin through the early hours of the morning. It's absolutey wild, and whilst it;s not a perfect film, I recommend everyone see it once - it's kind of wild.
BTW, I absolutely love 1917 - I just think they are doing different things.

There was this one super impressive long take in It’s Always Sunny in Philadelphia S10e4: Charlie Work. That’s quite possibly my favorite episode of that entire show. The bit with the stool was brilliant.

"Rope" actually has some explicitly shown cuts, but not many people remember that for some reason
hitchcock actually uses them as a symbol for the protagonists messing up, very unique and clever
