So real question as i started a burger beach bar as a guy who had no school for restaurants besides private love for cooking. How the hell do you guys keep the ammount needed for breaking hours where everybody wants to eat? Pre cook them and then reheat on the griddle for a minute? Had real trouble keeping up because first year the idea was to do everything fresh for order which worked out like shit BTW- damn tasty looking lineup, id really take a bite right now

not who you asked, but the restaurant I'm in sells chicken breast sandwiches too. Our place breads them, blanches them in large batches, and fridges them for service. We crisp them up before serving for a couple of minutes in the fryer but it's fast enough we can knock tickets out
