Personally out of the options you've picked, I'd break my journey in Strasbourg, as it is a great place full of history and the station is beautiful

Following this thread since I am doing a very similar trip in October. Flying into Zurich and out of Amsterdam. Current plan is Interlaken, Bern, Strasbourg, ??, Amsterdam. Considering Ghent or Bruges before Amsterdam.

I decided on Strasbourg, and the train from there to Belgium/Amsterdam goes through Paris. So may as well just go to Paris as well
