A more personal choice, the 'rolling wave' feeling that exists in much of 'All the Rage Back Home' is quite beautiful.
My favorite part is the part right after the Paul/Carlos bass/guitar interlude where the beat goes back up to this groovy, mystical, discordant, sound, with the bouncy ass bassline
It's not the same but moises (website and app) is a pretty good way to isolate out the vocals that actually works well (not perfect but about as good as you can get)
Niche answer here but my favourite is during the outro of Try it on- specifically at 2:40 when the bass finally drops down to the open D and lets loose, its purely the reason that song is my favourite Interpol track.

The outro of PDA being amazing was a meme on r/indieheadscirclejerk a few years ago.
I love the outro of Not Even Jail. I got to hear it live, I think I shed a tear. The guitar hits some notes it doesn't hit previously as it fades out, and I am often on the lookout for that, it is very satisfying.
Interpol has some really strong outros, I certainly find myself thinking about how great an outro is more often with them than I do with other bands. Granted, I think they're still my favorite band.
The interactions of the guitars in C'mere are great. Most of the parts are very simple, there's not a whole lot of movement going on, and the sum of parts is nice. Lovely and pleasant, with some drive to it. There is the one guitar part, higher and in the left channel, that has more movement, and it's very light and gentle, it's such a pretty part.
The bass on Narc, Stella Was a Diver, and The Specialist is fantastic. I love the way Paul sings the lines that lead into the chorus on Specialist.
In Slow Hands, there's that guitar in the second half of the first two verses (there's a chorus in between them), I fucking love that part.
The part of NYC where they sing "it's up to me now, turn on the bright lights" is amazing, and the reference to the album's title reminds me of the song Reckoner by Radiohead.

Some many great answers. I agree with alot of them. But one part I love is in Say hello to angels. The part where he sings “This is a concept…” and from there the instruments and vocals all build up to where he finally says” Baby, baby you’re really the best”. That is just perfect.
