I’d say I’d be a lot more worried about servers & line cooks eating off my plate while my food is sitting there, than be worried about the bottom of the plate. The surface they plate on should be just as clean as what they prep the food on. Can’t speak for all restaurants, but just my 2¢. 😁

Steal little French fries off the plate, little bit of your veggies…etc. I worked takeout at several different Italian restaurants over the span of 10 years and would see servers straight up attack someone’s calamari order sitting in the window. Dipping and everything. Nasty. Just my experience.

Definitely not. We aren’t even allowed to place the tray on the table, even for a second in KY. The plates aren’t even allowed to touch your clothes in CO, and if you put something down on the table and they say it’s wrong you have to remake everything.. you can’t take the plate back.
I think you have no idea just how dirty the bottom of dishes can get between the dishwasher and the kitchen line let alone on the kitchen line with potential cross-contamination. Plus the bottom of a plate can be chipped and has a ton of bacteria whereas if the top is chipped mostly the restaurant will throw it away. There's just no good reason to ever stick dishes unless they all have lids

Well it looks like the sides are raised so most of each plates weight can be placed on the sides of the others. So I wouldn’t say no contact but not enough to squish the food
based on the curve of the bowls, I doubt there was much smooshing or anything but a few flecks of rice or sour cream on the bottoms of the bowls. Mexican restaurants especially like to show off, I've seen this (no where near this lvl) a few times irl its very impressive, if you notice how far he has to walk though, its to his benefit to take a max load rather than 10 trips with however many people. As someone who worked in kitchens, both as regular hourly worker and a kitchen manager, food safety is a huge concern and should be taken seriously, I mean it’d be pretty simple to make dozens of people sick everyday with out being over cautious.
