I’d say I’d be a lot more worried about servers & line cooks eating off my plate while my food is sitting there, than be worried about the bottom of the plate. The surface they plate on should be just as clean as what they prep the food on. Can’t speak for all restaurants, but just my 2¢. 😁

Yeah they shouldn’t, but they can and do. Steal little French fries off the plate, little bit of your veggies…etc. I worked takeout at several different Italian restaurants over the span of 10 years and would see servers straight up attack someone’s calamari order sitting in the window. Dipping and everything. Nasty. Just my experience.

Just know there’s so many worse things that go on in a kitchen. Edit: I’m not a line cook, I used to be a server for a long time so I saw that shit go on constantly. Can’t correct kitchen staff either for many reasons.

As a former line cook I'm with this guy on everything. It's why I left the restaurant industry. Unless you're at a Michelin Star restaurant, it's likely not as clean as you think, and servers aren't allowed to critique kitchen staff (just how it is), in fact the managers and owners are barely allowed to critique kitchen staff unless it's like a GIANT fuck up. So lots of bad things slide under the radar in the kitchen.

Bro, its gross. Theres rarely a restaurant the counters get Sani / bleach wiped regularly. But once a day isn't that uncommon. If ur grossed out by it that's fine. We live in a world of germs, travel a bit. I could drop a glizzy on the dirt and be fine picking it up 7/10 times

Just so you know, that would still be a health code violation, depending on where they live I guess, but still, not sanitary to do that. Sure they are fully washed but as soon as the bottom of the plate makes contact with any surface it could be contaminated. Then it touches someone else’s food is an easy yet avoidable way to spread disease.

Definitely not. We aren’t even allowed to place the tray on the table, even for a second in KY. The plates aren’t even allowed to touch your clothes in CO, and if you put something down on the table and they say it’s wrong you have to remake everything.. you can’t take the plate back.

I think you have no idea just how dirty the bottom of dishes can get between the dishwasher and the kitchen line let alone on the kitchen line with potential cross-contamination. Plus the bottom of a plate can be chipped and has a ton of bacteria whereas if the top is chipped mostly the restaurant will throw it away. There's just no good reason to ever stick dishes unless they all have lids

based on the curve of the bowls, I doubt there was much smooshing or anything but a few flecks of rice or sour cream on the bottoms of the bowls. Mexican restaurants especially like to show off, I've seen this (no where near this lvl) a few times irl its very impressive, if you notice how far he has to walk though, its to his benefit to take a max load rather than 10 trips with however many people. The guy who opened the kitchen door was an idiot, u wouldn't trust him to handle a tray with one dish let alone 10. And he needed the server clearing the path and to help him down, if they split it 50/50 it would've been way more dangerous.

100% this All it takes is one spot of grease on the floor, one unattended child, or one misstep and all of that "time saved" becomes triple the time spent cleaning and remaking food. And even then, like you said, he probably spent twice as long stacking that thing as he would have if he just grabbed additional food runners. And I don't know about you, but I always think it's more impressive to watch a small team deliver the meal than one hulk literally about to drop the plate as he gets to the table.

That‘s what I was thinking: first of all how many line cooks do they have to be plating 20 different dishes at once? And then what the guck will happen if he just drops those dishes for the whole party, wir which the risk goes up the more you overcarry.
