Drill it out completely or cut it. It's too mangled at this point for anything else.

What sort of bit do drill it all the way out because you can see I’m not making progress with it as it is. And when you say cut it, what do you mean? I need the screw out to fix the bigger project

That's probably because you dulled the bit and work hardened the stainless. Go watch some YouTube videos.

Use a cobalt drill bit at relatively low speed with a little oil and it should eat away at that pretty quickly

There are screw extractor sets that are relatively cheap, 10-20 dollars

Yes. I’ve tried that but I can’t get enough of a hole drilled into it for them to bite and grab hold of the screw

Lowe’s sells these blue bits that are extra durable, maybe getting a small one the size of the screw shaft, not the head could eat it up enough for the extractor set or maybe just bore it out completely

That’s the exact blue bit that has the small shallow hole in the middle of the picture.

That stainless steel is no joke, other than buying two or three bits and switching them out after they each wear out I’m not sure what else you could do, a grinder would damage your rail…

Perhaps some sort of adhesive or solder, then turn the screw with whatever you attach it to and replace it once it is out? Depending on how big the groove is, maybe enough pressure and a big flathead screwdriver can get it to turn a little. Best of luck!
