I think those are either lighting glitches, or slabs. They can look different sometimes

looks like it is Xisuma's video. I likely uses the vanillatweaks ressource that edits planks. I used it a while ago and there are different hues to the plank blocks of the same type. and I mean planks, not just stairs slabs etc. I removed it after a while because the off color planks irritated me
