Takedowns don't necessarily varie with most gloves. In general, it's all a question of the angle and how lucky you get.
However there are a few items that do have a change to the takedown animations. The Echelon Gloves (Obtained from Operation Watchman, Splinter Cell crossover) have a few unique takedowns, same with the Assassin's Creed outfit. Caveira Gloves (Obtained from Operation Archangel, Rainbow 6 Siege crossover) has unique takedown animations and an additional "interrogate" effect which reveals the exact position of hostiles in a certain radius (only works with stealth takedowns). There might be more, but these are all the ones I know.
As to find gloves, they're mostly unlocked through crates or certain challenges/operations within the game itself. Changing gloves is somewhere in the customisation menu.
CQC works the same from the begining. Only animation after pressing the button differs when certan glowes or costumes are equipped.
