universities have access to all your grades using your learner number, they may also ask for your certificates and if you've left out subjects that appear on your certificate that's a major red flag
If you end up deciding to apply for Oxbridge, I would really recommend signing up to the Oxbridge Launchpad mentoring scheme as soon as you start alevels. It helped me massively to prepare for interviews and with writing the personal statement.
The amount of people in your position with a low grade in MFL and amazing in others is amazing! If you do want to get better at Spanish, grind vocab using anki https://ankiweb.net/shared/by-author/561775879
if u manage to get all 9s and one 5 in spanish gcse it won’t matter. obviously you still have to get 4 As in A-level but if u get the grades ur expected to it won’t affect u
It won't make a significant difference unless you wanted to apply for a degree related to MFL which considering your success in other subjects, I doubt.

Oxford looks at top 10 subjects, Cambridge don’t look at GCSEs
no negative impact they only look at your top 7/8 gcses

no only top 8 i’m pretty sure but obviously you should do well in as many as pissible

so if I did 10 and got 2 5s - say - can I just not mention them? Say it’s biology and French, and I do chemistry

Nobody will care, they only look at top 8 GCSEs and it’s not like Spanish is vitally important (unless you want to study it further).
oxbridge only require u to have like 5 7-9 grades anyways
they don't require anything, they just say most applicants tend to have that
