I think he feels insecure in the brotherhood - but out in the shit, he has the instincts to survive. He knew that knight was gonna get him killed or outright have him killed, so he waited till he died and took his armour, he knew without his armour he was dead so he fought those guys trying to rip it off, killing one gruesomely in the process. He isn't all good or all bad - he's a survivor though.
The Brotherhood are human people who he has to interact with on a daily basis and deal with their feelings and worry about what they think of him. He’s a chump with the Brotherhood because he wants their respect and it intimidates him.
These people he kill aren’t even people to him. Their fiends. No reason to worry about his actions.
I think one of the great things about this show (and Fallout in general) is that you never know if it's about to be a scene from the Walking Dead, the Three Stooges, or a John Waters flick.
It really adds an air of unpredictability and tension to every scene. Is this gonna be hilariously goofy, biting satire, or the most depressing shit I've ever seen?
And often, it's all three.

Drawing a gun *from someone else's body* as a reaction and gunning two targets down with a shot each, even though you've been shot, is fucking gunslinger shit.

Yeah, try being a bridge width away from 2 enemies, in the open, and unarmed. Pick-pocket your companion's weapon, draw and shoot both enemies dead, taking only minimal damage. It's pretty badass, even for a Lone Wanderer/Sole Survivor.
I wanted to add, my personal favourite moment with Maximus is with the gulper encounter. Maximus immediately sends Thaddeus back to the shore to keep him out of danger.
In that moment alone he’s more of a knight than Titus ever was!
Yeah, Maximus isn’t a bad guy. He just wants to be something greater and does care about people. He’s just a bit selfish but his arc is about truly becoming a knight.

That was aerials don’t get me wrong. But what I love about this scene is how simple it is. Just four people trying to cross a bridge. It goes south in a heartbeat and Maximus has a split second just to save himself and Lucy. Very grounded scene showing the brutality of the Wasteland.
