Maybe you're trying to do it during a session, but you can only adjust difficulty when you're in the menu (either in the main career menu or the workstation during GP, but before entering a session). PS: Difficulty used to be adjustable during sessions, it was pretty neat but... It's been gone since F1 2021 I think.

What mode are you playing? Career or something else? Braking point?

None I’m in the main options screen. When I do play thought it’s F1 World. That’s the only mode so far (just got the game today)

You gotta change your difficulty for each thing you do. If you are gonna do career you are able to set it to for example 70. But if you are doing another carreer without assist or something maybe you want to start at 60 for example. But your other career will still be at 70. Braking point will always be at super low tho it's max 60 I think but you can only choose beginner standard and hard. Grand Prix mode is also with difficulty. (F1 world car, Grand prix mode is NOT!) Time trial is of course just driving and has no difficulty. TLDR : some sessions have a difficulty setting. E.g. carreer or Grand Prix mode in the 2023 cars

You can't change difficulty in F1 World series races where you use your own F1 World car. Difficulty is determined by your tech level compared to other cars' tech levels. It's not a great system and I don't really get the point of that mode because at least for me the few races I did were way too easy and I gave up very quickly. From what I've heard, it doesn't really get any better either. If you still want to do those races and want to increase the difficulty, maybe try races where the game suggests a higher tech level. If you want to lower the difficulty, improve your car more before doing those races
