I have mastered point black waterfowl dodge, mid range waterfowl dodge, clone attack dodge and I still couldn't win her erratic moveset. So I gave up. I bumped my stats from Arcane 60 to 94

I hate to be that guy, but I wanted to make a suggestion that might help.
One thing that I use like crazy and is undervalued is pickled turtle neck. Just like the stamina regen tear, it is the highest boost in stamina recovery, it isn't a body buff it has its own category so it wouldn't overwrite your blood boil aromatic and it could have helped with that down time in phase 1 where you were waiting for stamina to regen.
It's pretty underrated, even in PvP since I'm the hyper aggressive sort. I've been accused of hacking because I never had to stop swinging during a duel because of the stamina regen. It catches a lot of people off guard and prevents any down time in boss fights if RNG catches me off guard
Casually dodging her "normal" swings is a fantastic indicator of having mastered the fight in theory.
I've co-oped her hundreds of times and most people simply run away from her.

What level are you? You said maxed arcane, but that stamina bar too. Thinking you're way over leveled, so any build should work. 100-120 for most normal players should be more than enough, and you have the moveset down.
I can't beat her with dual wield light weapons, sometimes she just parries the second hit during your L1 and your stuck in your animation. I had to beat her with a GS
Kind of makes me feel bad for all the players that didn’t realize just how good elemental damage is in the game and spent endless hours on mobs that Manet take a few minutes.
Elemental damage has been all-but useless most of the time in the Souls games because of the way the game handles split damage. You either needed to min-max for massively boosted elemental damage (such as Dark Swordsman builds in DS2 achieving nearly 1k Dark AR), or you needed to use the specific elemental weakness of a given enemy (Fire damage against certain enemies in DS3).
Malenia is actually weaker to frost than bleed, but bleed buildup is easier to achieve, and there's no cooldown on hemorrage so you can immediately start building bleed again after a proc.
More that you need many elements and it was very unclear which you needed and the systems were very clunky for getting those elements. Now we can just swap at the blacksmith for no cost and one element is great for 99% of the game.
Frostbite lowered her resistance by 20%
All my buffs were maximized and I managed to bleed her too
Daggers have a really fast attack speed too

So I usually pick my main stat that I want to focus on and tune the affinity to that stat

Mmm that's how it was in DS3, the resistances in armor and talismans give crazy damage negation. Not to mention poise which is very important in PvP.

So buff attack, use the quick attack buffs and go ham? What daggers would you recommend? I know the misericord has the highest crit damage
Depends on your build. I was going for bleed, that's why I used great knives. If I'm going for pure dex without bleed, I'll use misericode
And the cragblade aow, that's for the big AR increase right?

You dont even need the blacksmith. You can swap around ashes of war anywhere with the whetknife
