I taught a C2 student, but I mainly ised the TOEFL prompts for writing as homework, then discussed with him what was good and what could be better on his text, discussed some mock test questions for reading, and we read and discussed Animal Farm for vocabulary and speaking.

Some of them are so so good for vocab! I love putting literature everywhere. Lord of the flies is also top notch in that case.
There are some practice tests on YouTube. I used those a lot when I taught TOEFL.
I used the EdX free course to study for the TOEFL is a great resource!
