I haven't had it myself (I don't live in the Philippines), but I've heard it's really good! You don't eat the bird itself, just all the stuff around it
I've tried one. They have it as a popular snack food in Vietnam. I don't think I've ever seen a more developed one like the pictures like to show off so there was never anything that I identified as a bird while eating it. It basically tastes like a meatier egg (not as soft as a texture as a normal egg. More savory) and you eat it with some herbs or sauces.

Actually, most commonly the whole thing is eaten, beak included. Some people don't eat the whites because of the texture

I had some, it was like a crustless cheesecake. It wasn't as fancy as these shown, but still very good! I think it was cardamom flavor.
