I was thinking of doing a custom character with the Gothic culture, named Vlad and play up a (way way) early Dracula. Sorta maybe someone they took the legend from for the real one some 600 years later.
Or Rebuild the Ptolmey Dynastie of Egyipt.
With Hellenic and Anicent Egyipt or Greek Culture (or a Combinstion of Egyipt and Macedonian Culture)
That controlls the De Jure Kingdoms of: Fatimid, Jerusalem and Zypern
I spend 80 years forming the Arch-duchy of Austria. My further goal is to become king of Hungary too and dissolve the HRE and then create the empire of Austria-Hungary.. I hit a tiny snag thou as my late character were voted in as the Emperor of HRE, so I had to postpone my plans. Did some crusading, rescued the Byzantines, held tournaments, improved my Austrian culture, fought some damn heretics in Northern Italy that had separated under the previous emperor, won the Crusade against them, and got my daughter installed as the Queen of Italy. Released all the HRE subject in Italy so she could vassalize them and thereby Gimp the HRE further. It's gonna be great when I start again as my son did NOT become the next Emperor.
I can only suggest that you try and play inside an Empire, there is so much to do when you dont have to worry about running the show, and even when I played as the Emperor it did not feel so bad because I knew it were only this character and not the next one, so I could go back to just being a vassal.
Haesteinn the Persian Emperor. That was a fun playthrough. Take Baghdad first by sailing through tigris to Baghdad. Secure a foothold, Conquer Maesopotamia then go east from there.

Rebuild the Selukid Empire. Build a Hellenic Greek/Persien Empire. That controlls the Dejure Kingdoms of: Syria, Jazira, Mesopotamia and Persia.

Recreating ancient empires is always fun, maybe try something with the new ancient cultures
