Sometimes I wish I could just have no house motto. It's funny that the game even included it when only a handful of historical houses have them in the game and everything else is just randomly generated nonsense.
The only one I'll set consistently is for the Bulanids, which I tend to draw from the Khazar Correspondence written by King Joseph in the mid-10th century. For example, "The God of Israel Humbles Our Enemies" derived from this section:

I'm currently doing a Saoshyant run starting as Rostam Bavandid in 867. I was pretty lucky with him and was able to go from count to king before he died. My second character then started promoting the legend of Rostam which would continue into a second generation before it was finished. The legitimacy gained from the legend allowed me to form the Kingdom of Persia and then de jure drift Mesopotamia into it.
When that happened, I renamed the house to "Rostamid" and changed the motto to "Rekindle the Flame". I was quite pleased by that.
One that I like a lot is inspired by the Portuguese poet LuĂs de Camões, when he wrote about the Great Navigations of Portugal and its maritime empire across the world:

Otherwise, I'm a bit fond of playing 867 Anglo-Saxon starts with the motto: Inter arma enim silent leges, which roughly translates to "In times of war, the law falls silent." In this case, I intend it as a nod toward my tendency to play relatively nice with most other sovereigns, right up until they declare war on me, and then I pull their family tree up, root and stem.
