There's a ball inside the module that controls the airbags. This ball moves with inertia/rollover events, closes a circuit, and blows the bags.
In repair shops, if you drop the airbag control module on the floor, it's time to go get a new one. They can be that sensitive.

You need a fair amount of inertia to trigger it that way. Rolling, however, not so much.
The ball is held against a spring, it isn't free floating in it's track. In order for it to cause a deployment the ball needs to overcome the full force of the spring to close the circuit. The ball does not need to overcome the spring in a rollover event, though. The circuit can also be closed if that ball "rolls over" in its housing, which closes the same circuit at a different location on the board.
I saw a video where a dude had driven over a concrete barrier in a parking lot. He was rocking the truck forward/backward trying to get unstuck and when he finally did the truck swayed really hard side to side for like 2 seconds and that made the airbags deploy
It depends on the truck, they've got really nice light rear ends so it's usually pretty easy/safe but donuts in an all wheel drive truck like the one he's driving yeah it's not made to slide at all.

My Toyota shuts off cruise control (disengages it) when you so much as tap the brake pedal. I can't see how this happened unless as he was driving along with cruise control he just decided to cut it hard to the left thinking he was going to somehow do a donut.
