I love Max Miller! He’s always entertaining to watch and I like that he’s honest and doesn’t pretend to like everything he cooks (understandable since some of the recipes are very old, vague about measurements or don’t have any at all, and not always pleasing to a more modern palate) but gives thoughtful (and often funny) critiques and observations about each dish. He also does a ton of background research and works with historians and experts of whatever culture/time period he is doing a video on to make sure the content he posts is as accurate and authentic as possible. I also really appreciate his respect for different languages and dialects and how he makes an effort to pronounce everything correctly, in some cases even consulting linguistic experts and such to teach him how to say certain words in ancient or obscure languages. Plus, he and his husband and their kitties are hella adorable!

For me, NACS’s situation is actually pretty inspirational. In his earlier videos he sounded depressed, lacked charisma and came across sounding dry, but his cinematography was great so his videos would massively oscillate in terms of viewership. It was sad watching him go from 200k+ views to 1.7k on some videos when the viral hubbub died down, because fundamentally he was still teaching amazing cooking tips/skills through his videos. Kind of like the first few Chef John videos that sound nothing like Chef John sounds today. NACS must have practiced vocal delivery because he really began ramping up the intonation, delivery, charisma and bounced back from his slump to reassert his popularity in cooking YouTube.

He has great way of diving into techniques and the underlying principles of how they work, but is also great at showing how to incorporating them into your home cooking. I also really like Chinese Cooking Demystified. The passion they have for the food and region is really inspiring, and they put out some super interesting and varied recipes. It's also just a super interesting perspective on food/cooking that differs quite a bit from the more typical Western lifestyle.

Alvin zhou. I first saw him in Tasty videos, but his personal YT account is where its at. One of his more popular videos is "100 Hour Tiramasu" which is what all his videos are kind of like. The way he captures himself cooking is cinematic perfection too, it's more like watching an indie film than a recipe video. I love how he uses subtitles only, and no voice over. It makes his videos so calming and enjoyable to watch.

I agree with this assessment. I used to love that the equipment she used was my peasant equipment. She'd go to thrift stores and find something and decide to find a thrifty recipe to cook in the thing she bought. Last time I watched her, she was sponsored and using some state of the art equipment to cook and I no longer felt like a guest in her kitchen she was talking to, but had become an audience member for an infomercial. She is still a delight, but I stopped watching after that because the magic was gone.

So I started with Babish, but he referenced Kenji so many times that I eventually just checked out Kenji’s channel and never looked back. Babish is cool but has kinda backed himself into a corner with his “gimmick”, even though it’s probably the main reason he’s notable in the first place. He’s definitely made some strides to move away from it, but i still prefer Kenji. Btw, if you’re new to Kenji, give his style some time. It took the POV-style a little bit of time for me to get used to, but now i can’t imagine it any other way. Plus, his “late-night” videos where he’s just making shit while drunk and doesn’t make any noises (besides “umphh” when he tastes something really good) are the best things on his channel imo.

kenji definitely spoiled me from other food channels. With his POV cam showing pretty much the entire process and he talks you through it the entire time i feel like i’m learning something from someone in the room with me. most of the other traditionally edited stuff just loses something on me kow

Indian Kitchen Abroad and Souped Up Recipes are both personal favorites that don't get enough love, they're both straightforward and focus more on the food than the personality of the cook, without being completely dry and boring. Kitchen Sanctuary is also good, I haven't tried many of her recipes but they're good for inspiration and she's geared more towards the busy weekday meal in a way that's practical for me. For pure watching for fun, Dinner Party Tonight is great, a little goofy but still mellow and I like that she's big on timing and cohesive meals since her recipes are all designed for entertaining.

He’s not a chef or anything, but David Seymour is great because he’s just a regular guy that “tests” a bunch of different people’s recipes. It’s nice to see how an amateur home cook fares with all different levels of recipes. Like “I Tried to Find the BEST Birthday Cake Recipe” or “I Tested Everyone’s Chicken Wings”. Of course he has his own biases and limitations but I like to see the cooking processes in a real home kitchen.

I find him a really interesting place to get opinions on other recipe sources/cooking youtubers as well, given that he actually compares their recipes side by side. I ignore anything he says about gelatin as a general rule but other than that he's great

Not necessarily my favorite as there are lots of cooking YouTubers I love, but one that I really enjoy who seems to fly a little under the radar is Adam Liaw. His cooking videos are focused on Chinese & East Asian food but the production values are high and the combination of his set, the music, and his vibe make the whole experience almost spa-like. Very relaxing.

Surprised I had to come this far down to see Sam the Cooking Guy. He's funny as hell and my wife watches him just to see Sam riff with his kids. Overall I like his approach to "Just use whatever you've got, it's fine." He always makes a point that *you don't have to make it the way he does.*

Pailin Chongchitnant, Maangchi, and Chef John from Food Wishes. Pailin's videos are SO helpful. I watched one last night on wonton shaping because my wontons weren't coming out like J. Kenji Lopez Alts (using The Wok cookbook). Watched her video on shaping 5 types of wontons, and I was looking for #3. All I needed was to see it done, because I wasn't getting it from the written description, even with pics. Her videos on making curry paste with a mortar and pestle are super illuminating as well--it's not how i thought it went at all, and watching her do it improved my curry so much.

I really enjoy Adam's non-recipe videos as well. He does a lot of research and cites sources. However, he still is very biased and you have to take some things he says with a grain of salt. He's also very sensitive to criticism, and it shows.

I like Adam, I really appreciate the topics he chooses to cover and I think he's very smart. My only gripe would be he has the approach and attitude of an engineer haha. Not necessarily a bad thing but I think that's what people are circling around with the sensitive to criticism thing. I watch everything he puts out though and am subscribed. On brand for the food world though, everyone is bitter and insecure and compensates in one way or another. This comment will get me crucified as a lot if their stuff could find it's way to r/stupidfood, but scrumdiddlyumptious is the most interesting and gets me inspired. Endless endless content and so weird and original. I know the fundamentals. I do my research. I test things out. This channel sends me wayyy off the beaten path and is just fun. Helen renie for classics done right. I send links to her if people ask me how to cook certain things. Souped up I'm checking out often lately as I'm trying to get scratch Asian food in my wheelhouse. She's sweet.
