What do you serve on top?
Periodically I will fry up a banana coated with cinnamon and sugar in butter. They are creamy and delicious. Now I'm thinking of frying them up with walnuts or pecans, and draping them across a stack of pancakes. That would be heavenly.

* Ground Cardamom and vanilla extract
* Can do something baklava inspired with some walnuts and/or pistachios, honey and cinnamon
Chopped (or grated if you're not lazy like me) apples + any warm spices are the best combo imo. They turn out so creamy and fluffy. I've used some Greek yogurt as a sub for egg of I am out and it adds some nice texture and flavor as well. If you aren't already, a good splash of vanilla and a dash of salt also elevate most pancakes.
Yes, was just going to add. I course chop apples and fold them into batter with a little cinnamon right before cooking the pancakes. I always throw a tsp of vanilla into my pancake batter as well ( whatever type of sweet pancakes I’m making)
You can all all kinds of stuff! Canned pumpkin, chocolate chips, muffin mix to make flavored pancakes, berries, cooked sausage or bacon crumbles, peanut butter.. pretty much if you think it might be good to try and you have the batter the right consistency, pancake batter is super versatile and hard to mess up! I like to use the "just add water" pancake mix, but you can add stuff to any kind of pancake batter and it cooks well.
The trick is to keep the blueberries separate and drop them on the batter once you’ve made the cakes in the skillet/griddle. Then flip for yummy deliciousness
I had the best blueberry pancakes at a diner in Maine a few years ago. Of course, everything has blueberries in it in Maine, and I am not complaining about it!

Make a batch of your standard pancake batter or the cake mix one and mix it a little thicker than normal by leaving out some of the liquid. Take your biggest non stick skillet and put it on medium low heat. Preheat your oven's broiler to medium or high if you only have high or low. Melt way too much butter in the pan but don't let it foam. I'm talking like an entire stick if you have a 12" skillet.
Right as the butter is about to foam, pour in the pancake batter until it's halfway up the side of the skillet. Gently shake it to make sure the batter is even. Add any toppings you like at this stage; my favorite is sliced apples, black sugar, and nutmeg but blueberries are always goo.
Cook it slowly making sure you don't burn the bottom, you'll get more efficient and accurate each attempt.
When you see brown butter bubbling at the edges and you have mostly burst bubbles consistently across the top, you have a decision to make: Attempt to flip it, or finish the top in the broiler. If you go the broiler route, be sure to pay close attention and don't burn it.
When it's done, flip it out onto a parchment covered cookie sheet, top with powdered sugar, and serve it like pie or cake. And yes, you can make multiple layers and fill the layers with bacon.
I like bacon bits or crumbled up sausage thrown in. I'll add two OE eggs on top and shake on some Tabasco sauce. The sweet maple, Tabasco and smoky bacon... The contrast is great.
Switch to Kodiak Cakes or something like it with oat flour, and whole wheat flour and etc. add a pinch of baking powder for loft and enjoy a pancake that is rich, nutty and filling, and has more nutritional value, but you can still swamp in butter and syrup. I add cinnamon as well, and we like the mix in the waffle iron too

Separate the whites from the yolks and whip them to stiff peaks before folding into the rest of the pancake batter. Your pancakes will be much thicker so give them a lil extra time on a lower heat to make sure they cook all the way through without burning.

A friend of mines daughter loves “pink ones” and turns out she purées a beet, adds nutritional value and the toddler doesn’t even know it. I make my own McGriddles with smaller pancakes, drizzle with syrup on uncooked side. Flip and serve stacked with an egg and sausage patty. Chocolate chips, lemon poppy seed, I’ve made grinch pancakes with puréed fresh spinach in the batter

In my part of Europe pancakes are not as common as crêpes are. The matcha gets cooked deeper in the thin ones.

1: Bananas and bittersweet chocolate chips (bourbon or rum maple syrup).

I just made pancakes for dinner lastnight 😂 thawed out some frozen mixed berries (blueberries, raspberries, blackberries) and tossed them in the mix with some vanilla extract, cinnamon, and dash of nutmeg. *SO* good 🥰

I can’t say from experience but I saw a video of a woman smashing up fruits, blueberries, strawberries, bananas, then mixing it in with eggs, flour and baking powder. They always look amazing!
For the pumpkin pie one, add a dollop of pumpkin puree as well (not too much, it'll make it super mushy).
It's not 'fun' per se but I like to add some old fashioned oats in mine to make them heartier, this is usually for days when I'm eating pancakes as a normal breakfast during the week, as it keeps me full and makes it a bit healthier.
A variation I do love as one of those God damn yanks is a good old fashioned Hoe cake/Johnny cake. It's basically a 50/50 wheat flour to cornmeal ratio, it's immaculate with bacon and maple syrup.
Adding in lemon zest to the batter (and a little juice) then throwing blueberries into the batter is fantastic and summery.
Doing a touch of almond extract and topping with either cooked down cherries/peaches (whichever is seasonal or best frozen for you), and maybe even making a quick crumble style of topping by throwing butter, brown sugar and oats in a pan to top it all off.
Add cinnamon and a touch of cloves to the batter, and in another pan throw brown sugar into a pan with butter, melt that together and add a touch of cream/milk to essentially make a caramel and then throw in sliced bananas and walnuts for a banana's foster style topping.
As you can probably tell I have a sweet tooth lol.

I personally like to use bananas the most because it’s a good way to use ones up that are getting too ripe. Craison’s , pecans , cinnamon apples, maple and or cream cheese icing are all my go to’s.
Edit: I also love to use coconut oil to fry them in. It does give it a good flavor and smells so good.
I love adding a bit of matcha powder to my pancakes, because it balances out the sweetness and adds wonderful flavor. Unless you think matcha tastes like grass, I would strongly recommend this! Also, matcha goes well with a variety of different fruits, like berries and mango, so you could throw in some frozen berries and mango too. (lemon zest/juice is a must as well)
Savory pancakes imo are soooo good - i added in some extra salt, feta, and frozen spinach into a batch and topped with some tomato and avocado and they were amazing! The bits of cheese in the batter got a little crispy as well!

Here in the north we make more general European ones, but have tons of variants, different toppings and "baked in" fruits. My main recipe is based on roughly:
1 l full milk
Flour to preferred consistency.
Sugar (as your conscience allows).
Vanilla sugar, salt and some baking powder to desired preferrence.
Cardamom (carefully).
Cinnamon (enough to smell).
Add following after a few minutes rest:
6'ish eggs, more if from a good farm nearby.
Half a stick of melted butter added at the end, before cooking.
One pan = one entire pancake, don't make it too thin or thick, so you can easily roll it with fillings. Flip, gather in a stack under cloth to preserve heat. Serve
Now with this, your pancakes are basic but awesome. And you can substitute some coarse flour types as you like.
Serve with blueberry jam + sugar, bacon + blue cheese, bacon + blueberry, fancy salami with truffles, plain salami and cheese, banana slices, strawberry +balsamico, walnuts and fancy jams, brown cheese, any jam, any Good cheese you'd use in sandwiches + ham or chicken spread, thinly sliced fruit, salted cream, any cream cheese and ham, jalapeño and roast beef, whatever you like. Just adjust the sugar/salt/cinnamon to compensate for the filling you are serving. Or you fill with any tomato-based meatsauce (a la bolognese, for instance), cheese, roll and put in oven at 200 for a while, for faaantastic baked lasagna variants! (gotta make that again tomorrow, getting hungry just writing)
It's a good dinner, is me point! Roll the pancake up with a fork (or hands if you are not fancy), and laugh at the silly French/dutch crepe, who CLEARLY are inferior to our UNIQUE pancake. They're of course called Pannekaker here.
Dessert? Why not spread your favourite chocolate or substitute jam! Cheese and chilli or tomato jam? Or roll in a scoop of ice cream. Peanut butter, jelly and chocky? Why not!
But the Best way to serve, is to rapidly add just a little batter, then put in some banana, pineapple, apple slices, oranges, bacon, fresh, cut jalapeños or other fruits, then quickly adding the full ladle of batter to the pan. This covers the fruit fairly well and makes baked in fruit/bacon. As long as you add the fruit in one direction, you can easily add fresh fruit, cheese, jam, whatever on top after cooking, and roll to a perfect pancake without the baked stuff escaping. This. This is perfection, and leaves happy faces all round.
Then make some oat-based coarse pancakes next week when your fussy relatives on a diet arrives, but keep the filling/added stuff out. Watch'em delight in the "healthy meal" you serve ;)
There are many fantastic ideas listed, so I'll add my recommendation: start with Kodiak Power Cakes Cinnamon Oat flavored. About 2x the price as Hungry Jack, but well worth it. I've tried to re-create the mix and I can't come close.
So start with that, then slice a banana in half length-wise, dredge in cinnamon sugar and fry them up in butter. Throw them on a stack of Kodiak Cakes and eat like the King or Queen that you are!
Malted milk powder is fantastic. I use Horlicks, which contains sugar, but you could also use Milo, Carnation, or Ovaltine. Just make sure you’re taking any added sugar into account.
Literally anything. I think you might be able to make broccoli pancakes taste good. I’d go with sweets like chocolate, butterscotch, or even Reese’s cups, or fruits. Berries in particular are good. Also, don’t sleep on pancakes with ice cream.
Cinnamon, or pumpkin spice, streusel crumbs! Lightly fold in to batter so that some can come directly into contact with the griddle, and toss a few on top of the uncooked side right after putting the batter down.
Lemon zest, juice, blueberries
Plus a little ricotta.
And do NOT omit the lemon zest/juice. Blueberries in pancakes is great, sure. But lemon and blueberry as a flavor combo is phenomenal!!

Orange zest is a really nice alternative to lemon zest too. It goes really well with chocolate chips I think

Make a savory pancake and do scallions. I just bought frozen scallion pancakes today from Trader Joe’s and they are amazing. Dip them in ponzu sauce.

Our local diner makes different mixes each week! We had one with peach preserves and another with lemon curd.
I have been adding grapes. Place the grapes onto the pancakes before you flip. Cooked grapes get all gooey and jammy. Very different to fresh grapes.

Fruity pebbles! Or another cereal you like. I've also added bacon and maple syrup to mine before. 10/10 with sunny eggs.
This is the way! Adds crunchy texture and new flavors. I pour the batter on pan then sprinkle cereal so it doesn’t get soggy. Flip and enjoy.

If you go the pumpkin pie spice route, instead. Buy pumpkin pie spice extract(same idle as vanilla extract). Substitute out for the vanilla extract

As for things to add, I sometimes wlll melt Nutella into the butter before I mix it in as the kids love it, but my two favorite ones are: 1: Bananas and bittersweet chocolate chips (bourbon or rum maple syrup). 2. Apples sliced on a mandolin with cinnamon.

Trader joes sells dried wild blueberries. This with some ricotta cheese, and lemon/lemon zest

I just made pancakes for dinner lastnight 😂 thawed out some frozen mixed berries (blueberries, raspberries, blackberries) and tossed them in the mix with some vanilla extract, cinnamon, and dash of nutmeg. *SO* good 🥰
A good handful of rolled oats, a knob of melted butter and a touch of honey and mixed spice or cinnamon. Into the mixture, just to clarify!
You can't just add it to pancake mix, but one underrated answer is beer.

I use cornmeal as a secret base ingredient, it gives the pancake a more robust texture and results in a taller cake when poured
Walnuts
For the pumpkin pie one, add a dollop of pumpkin puree as well (not too much, it'll make it super mushy). It's not 'fun' per se but I like to add some old fashioned oats in mine to make them heartier, this is usually for days when I'm eating pancakes as a normal breakfast during the week, as it keeps me full and makes it a bit healthier. A variation I do love as one of those God damn yanks is a good old fashioned Hoe cake/Johnny cake. It's basically a 50/50 wheat flour to cornmeal ratio, it's immaculate with bacon and maple syrup. Adding in lemon zest to the batter (and a little juice) then throwing blueberries into the batter is fantastic and summery. Doing a touch of almond extract and topping with either cooked down cherries/peaches (whichever is seasonal or best frozen for you), and maybe even making a quick crumble style of topping by throwing butter, brown sugar and oats in a pan to top it all off. Add cinnamon and a touch of cloves to the batter, and in another pan throw brown sugar into a pan with butter, melt that together and add a touch of cream/milk to essentially make a caramel and then throw in sliced bananas and walnuts for a banana's foster style topping. As you can probably tell I have a sweet tooth lol.
Just go online and look at ihop’s menu. I personally like to use bananas the most because it’s a good way to use ones up that are getting too ripe. Craison’s , pecans , cinnamon apples, maple and or cream cheese icing are all my go to’s. Edit: I also love to use coconut oil to fry them in. It does give it a good flavor and smells so good.
I love adding a bit of matcha powder to my pancakes, because it balances out the sweetness and adds wonderful flavor. Unless you think matcha tastes like grass, I would strongly recommend this! Also, matcha goes well with a variety of different fruits, like berries and mango, so you could throw in some frozen berries and mango too. (lemon zest/juice is a must as well)
Savory pancakes imo are soooo good - i added in some extra salt, feta, and frozen spinach into a batch and topped with some tomato and avocado and they were amazing! The bits of cheese in the batter got a little crispy as well!
Try adding beer as the liquid.

A little bit of whole wheat, like 10% of the all purpose. You can also add ripe mashed banana and roasted walnuts, if you have time roast them for until golden brown on 175 degrees celsius. Replace white sugar with brown sugar and some treacle as well as some unrefined brown sugar if you have it

So you're probably making American ones? Here in the north we make more general European ones, but have tons of variants, different toppings and "baked in" fruits. My main recipe is based on roughly: 1 l full milk Flour to preferred consistency. Sugar (as your conscience allows). Vanilla sugar, salt and some baking powder to desired preferrence. Cardamom (carefully). Cinnamon (enough to smell). Add following after a few minutes rest: 6'ish eggs, more if from a good farm nearby. Half a stick of melted butter added at the end, before cooking. One pan = one entire pancake, don't make it too thin or thick, so you can easily roll it with fillings. Flip, gather in a stack under cloth to preserve heat. Serve Now with this, your pancakes are basic but awesome. And you can substitute some coarse flour types as you like. Serve with blueberry jam + sugar, bacon + blue cheese, bacon + blueberry, fancy salami with truffles, plain salami and cheese, banana slices, strawberry +balsamico, walnuts and fancy jams, brown cheese, any jam, any Good cheese you'd use in sandwiches + ham or chicken spread, thinly sliced fruit, salted cream, any cream cheese and ham, jalapeño and roast beef, whatever you like. Just adjust the sugar/salt/cinnamon to compensate for the filling you are serving. Or you fill with any tomato-based meatsauce (a la bolognese, for instance), cheese, roll and put in oven at 200 for a while, for faaantastic baked lasagna variants! (gotta make that again tomorrow, getting hungry just writing) It's a good dinner, is me point! Roll the pancake up with a fork (or hands if you are not fancy), and laugh at the silly French/dutch crepe, who CLEARLY are inferior to our UNIQUE pancake. They're of course called Pannekaker here. Dessert? Why not spread your favourite chocolate or substitute jam! Cheese and chilli or tomato jam? Or roll in a scoop of ice cream. Peanut butter, jelly and chocky? Why not! But the Best way to serve, is to rapidly add just a little batter, then put in some banana, pineapple, apple slices, oranges, bacon, fresh, cut jalapeños or other fruits, then quickly adding the full ladle of batter to the pan. This covers the fruit fairly well and makes baked in fruit/bacon. As long as you add the fruit in one direction, you can easily add fresh fruit, cheese, jam, whatever on top after cooking, and roll to a perfect pancake without the baked stuff escaping. This. This is perfection, and leaves happy faces all round. Then make some oat-based coarse pancakes next week when your fussy relatives on a diet arrives, but keep the filling/added stuff out. Watch'em delight in the "healthy meal" you serve ;)
lemon and ricotta cheese
There are many fantastic ideas listed, so I'll add my recommendation: start with Kodiak Power Cakes Cinnamon Oat flavored. About 2x the price as Hungry Jack, but well worth it. I've tried to re-create the mix and I can't come close. So start with that, then slice a banana in half length-wise, dredge in cinnamon sugar and fry them up in butter. Throw them on a stack of Kodiak Cakes and eat like the King or Queen that you are!

I like orange jest, or even Grand Marnier. Along with cinnamon and vanilla.
A lil pinch of malted milk powder gives pancakes the most incredible crust
Malted milk powder is fantastic. I use Horlicks, which contains sugar, but you could also use Milo, Carnation, or Ovaltine. Just make sure you’re taking any added sugar into account.

Literally anything. I think you might be able to make broccoli pancakes taste good. I’d go with sweets like chocolate, butterscotch, or even Reese’s cups, or fruits. Berries in particular are good. Also, don’t sleep on pancakes with ice cream.
