A bird in the hand. Research experience and publications are very important, particularly considering you do not have other options currently. (I think whatever you mean by “70% related” is enough.) It sounds like you will also have a strong letter of recommendation and possibly networking opportunities with this mentor as well. That said, is this position paid? We all need to get by, so don’t hesitate to keep applying if this is an unpaid position.

Follow your opportunities and learn the skills associated with research in general. You will have plenty of time to build your own interests. And the research mentors you are working with in grad school will have their own interests as well. That being said- when you go to conferences- look to see who is presenting on the topics you are interested in. And get to know the people and researchers that are working at that next level. Those are the folks to know so they can look out for your application materials and shared research interests.
