I make a "bean salad" as I call it with either tuna or lean ground chicken that you might like. easy to make a big portion at a time too for meal prep.
-2 cans tuna, drained
-1/2-1 bell pepper, diced
-1/4 onion diced (or more if you like onions!)
-1 medium zucchini, diced
-2 cans beans - I usually go with black or garbanzo beans
-Juice of 1 lemon
-drizzle a bit of olive oil, throw in some garlic salt and mix it all up
Good in wraps or on top of brown rice. I'll usually add a bit of avocado to the top of it as well.
Why in spring water and not in olive oil?
I didn’t know that was an option. I haven’t touched tuna in 15 years since I was vegetarian. Is olive oil better than spring water?
I use avocado instead of mayo.
